It is difficult to say where such a “royal” name for this pastry came from, but despite the simplicity of the ingredients, the taste of the pie turns out to be really chic and worthy of a menu of kings.

And in order for the royal pie with cottage cheese and apples to become truly royal, you need to seriously approach the choice of ingredients, even though they are simple.

It is important to use very dry cottage cheese to prepare the filling, because after mixing it with yolks and sugar, the curd filling will become watery, because the sugar, dissolving, turns into syrup. Therefore, if your cottage cheese is not dry enough, transfer it to a sieve lined with several layers of gauze and put it in the refrigerator for several hours so that excess whey is glassed.

It is advisable to take hard apples, for example, Simirenko or Granny Smith varieties, fragrant Antonovka is also good.

Butter must be taken out of the refrigerator in advance so that it becomes soft.

Separate the yolks from the whites.

Mix a pinch of vanillin (or the amount to taste) immediately with sugar so that a vanilla note is present in each layer of the cake. Sift flour with baking powder and a pinch of salt.

This amount of ingredients is enough for one large pie (form - 25x35 cm), or you can do as I did - bake two small pies. Forms preferably use glass or non-stick coating. They need to be lubricated with a small amount of oil (can be vegetable), it is not necessary to cover them with paper.

Let's start by preparing the dough. To do this, put soft butter in a suitable bowl, add 100 grams of sugar and 3 yolks to it.

Beat everything with a mixer until a lush and homogeneous mass is obtained.

Add the flour mixture and use your hands to knead a soft dough. In order for the dough to become crumbly after baking, it does not need to be kneaded for a long time, it is enough that all the components of the dough come together.

The dough is very pleasant and almost does not stick to your hands, however, it needs to rest a little, so we will wrap it in cling film and put it in the refrigerator while we are doing the curd-apple filling.

For the filling, wipe dry cottage cheese through a sieve, add 100 grams of sugar and 3 yolks to it. Mix everything with a spoon until smooth, and you will see that the cottage cheese has become much thinner.

Peel the apples, remove the seed box and cut into half rings.

Preheat the oven to a temperature of 180-190 degrees. We take the dough out of the refrigerator and distribute it with our hands in shape, forming sides. We will make the sides higher, because there are a lot of fillings. And so that the dough does not become wet from the curd filling, take 1-2 teaspoons of protein (not yet whipped) and distribute it over the surface of the dough with a brush.

Then put the curd filling on the dough, filling the dough halfway.

Start beating egg whites on low speed mixer until frothy.

Then increase the speed of the mixer and gradually add the remaining sugar (200 grams). Beat egg whites with sugar until glossy air mass and firm peaks.

After 30 minutes, we take out the form from the oven and see that the apples and the edges of the dough are noticeably browned.

We spread the whipped proteins on the hot pie, quickly spread them with a spoon and return the form with the pie to the oven for another 10-15 minutes.

We bake the cake at the same temperature (180-190 degrees). The meringue should brown a little, but remain soft.

Remove the cake from the oven and let it cool completely right in the mold.

After cooling, the royal pie with cottage cheese and apples can be cut into portions. By the way, such charming droplets of caramel color as pearls will appear on the surface of the meringue.

Very tasty cake with cottage cheese.

  • 250 g flour
  • 120 g butter
  • 100 g powdered sugar
  • 1 yolk
  • 2 tbsp. l. sour cream
  • 2 tbsp. l. cocoa
  • 0.5 tsp baking powder
Filling:
  • 1 kg cottage cheese (soft, spreadable and smooth, I have 9% fat)
  • 400 g cream 30-33%
  • 200 g sugar
  • 5 eggs
  • 60 g coconut flakes
  • 30 g starch (I have corn starch)

Many probably know a dish called royal pie or royal cheesecake. Usually it has a simple curd filling in the middle, and grated shortbread dough on top and bottom. I have this dish on the site -. So today I present to you an improved version of this curd dish. I made the dough not just light, but with the addition of cocoa, for a better taste contrast. The filling itself was ennobled with cream and coconut flakes. I also made the preparation of the filling closer to the principles of preparation, namely, I didn’t whip the mass for the filling, but simply mixed it thoroughly and baked it at a low temperature, thanks to which the filling turns out to be more tender, creamy, smooth.
The resulting pie came out incredibly tasty, it's not just some kind of cheesecake, it's just a royal pie)) I'm incredibly pleased with the result!

Cooking:

Put flour, powdered sugar, cocoa, baking powder in a food processor, add soft butter cut into cubes.

Grind in a food processor into crumbs. You can also cook by hand, everything turns out great too, just grind the flour with butter with your fingertips, or chop on the board with a knife.

Add the yolk and sour cream, turn on the grinding again.
Then, roll the dough into a ball with your hands. Do not knead the dough, only at a minimum to collect in a ball.
Divide the dough in half and put in the refrigerator for an hour, or in the freezer for 20-30 minutes.

We are preparing the stuffing.
Put cottage cheese and cream in a container, grind well together with a submersible blender into a homogeneous smooth mass. If your cottage cheese is not homogeneous, wipe it first through a mesh colander.
Products are desirable at room temperature, so they are easier to combine.

Add eggs, sugar, starch, mix well together with a blender.
Grains of cottage cheese should not be felt in the finished mass!
Add coconut flakes, mix with a spatula. If you do not want to add coconut flakes, then simply exclude it, it will turn out delicious anyway.
The filling is ready.

Grate the first half of the dough on a coarse grater, arrange in a shape (my shape is 25x25cm), press lightly.

Pour in the filling.

Grate the second half of the dough, and evenly sprinkle the top of the filling.

Put in an oven preheated to 160 degrees, bake for about 50-60 minutes or be guided by your oven. When tapped, the filling will wobble in the center, just like when baking a cheesecake, this is normal.
Cool the finished pie. Although it is warm and delicious, I liked it more immediately after cooling. After storage in the refrigerator, the next day it became a little more dense, already like a cheesecake, but no less tasty for that.

  • flour - 320 gr.
  • butter (butter) - 100 gr.;
  • eggs - 5 pcs.;
  • soda - 10 gr.;
  • juice (lemon) - 1 tsp;
  • starch - 2 tbsp. l.;
  • sour cream - 150 gr.;
  • vanillin - 30 gr.;
  • cinnamon - 5 gr.;
  • sugar - 2 cups;
  • powdered sugar - 100 gr.;
  • berries - 300 gr.

Separate the whites from the yolks of 4 eggs. Mix sugar, yolks and butter until a homogeneous mass is obtained. Add soda and flour, knead the dough. You can knead the dough immediately in the form, then roll it out in a baking dish and make high sides.

We spread any berries on top of the dough layer, this recipe uses apricots, raspberries and currants. Sprinkle the berries with vanilla sugar. To prepare the filling, knead sour cream, cinnamon, egg, sugar. Whisk and add pudding mixture. Pour the prepared filling into a mold and send the cake to the oven, heated to 160 degrees. Separately, boil the rice and add dill and parsley to it, add a couple of tablespoons of sauce for taste. Let's start assembling the pie, because in this recipe it consists of layers.   • yeast - 20 gr.;

Sift flour, add salt and sugar, dry yeast and mix thoroughly. Then add butter. Heat the milk until warm and add it to the dough. After kneading the dough, grease it with oil and leave for about 40 minutes.

This time we prepare the filling. Shred the cabbage, add salt and pour boiling water. Let stand for about 5 minutes and squeeze the cabbage.
